Ingredients
- 1 cup zucchini, thinly sliced
- 5 green onions, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 teaspoon Morton Lite Salt®
- 1/8 teaspoon dried whole basil
- 1/8 teaspoon dried whole oregano
- 2 or 3 eggs (according to plan), beaten
- 2 ounces reduced-fat Monterey jack cheese
How to Prepare
- Spray skillet with Pam®.
- Saute zucchini and onion until tender. Stir in parsley, salt, garlic powder, basil, and oregano.
- Combine eggs and cheese.
- Combine egg and cheese mixture with sautéed vegetables.
- Spray a baking dish with Pam®.
- Pour mixture into the prepared pan.
- Bake at 375 degrees for 20 minutes or until set.
